Abstract

Ethnoscience learning is one of the new breakthroughs in the world of education that combines culture with science. Ethnoscience raises local culture and wisdom to be used as learning objects so as to make learning more meaningful. One of the local wisdoms owned by the city of Serang is in the form of milkfish satay culinary which can be used as a reference in learning science. This study aims to analyze the ethnoscientific studies contained in the process of making milkfish satay which is on natural science material for junior high schools. This research uses a qualitative approach with the type of ethnoscience research. Data were collected through observation, interviews, documentation, and literature studies. The results showed that the process of making milkfish satay consisted of eight main stages. Ethnoscience studies are found in science material for grade 7 and 8 junior high schools, especially in the material for Classification of Living Things, Classification of Matter, Temperature, Heat and Changes, Energy in Living Systems, Additive and Addictive Substances and Particles that make up Atoms and Living Things. Based on the results of scientific studies, it was found that the process of making milkfish sate by the community can be used as a source of student learning to foster local wisdom and character values in students.
